How to Use the Baking Cost Calculator
- Enter each ingredient — its name, the full package size (in the same unit as your recipe amount), the package price, and the recipe amount you use.
- Set your yield — how many servings, cookies, slices, or loaves the recipe makes.
- Add overhead — typically 15–25% to cover energy, packaging, labels, and wear on equipment.
- Set your profit margin — 30% is a common starting point for home bakers; professional bakeries often target 40–60%.
- Read your selling price — this is the minimum price per unit to achieve your target margin after ingredients and overhead.
How Is Baking Cost Calculated?
Ingredient cost = (Recipe Amount ÷ Package Size) × Package Price
Total Recipe Cost = Sum of all ingredient costs × (1 + Overhead%)
Cost Per Serving = Total Recipe Cost ÷ Number of Servings
Selling Price = Cost Per Serving ÷ (1 − Profit Margin%)
What Should Overhead Include?
- Electricity / gas for oven, mixer, refrigerator
- Packaging materials (boxes, bags, labels, ribbon)
- Depreciation on equipment
- Water and cleaning supplies
- Your time (if pricing for sale, factor in an hourly rate)
Baking Pricing Tips
- Never price below cost. Calculate ingredient + overhead cost first, then apply margin.
- Research your market. If artisan cookies sell for $4 each locally, your cost model needs to support that price and leave margin.
- Adjust for batch size. Fixed overhead costs spread across larger batches, reducing per-unit cost. Use our Recipe Scaling Calculator to find the optimal batch size.
- Account for yield loss. Broken cookies, imperfect macarons, and trimmed cake layers reduce saleable yield. Factor in ~5–10% waste.
